Whipped brie is the latest TikTok trend, but cheesemakers aren’t happy
Forget whipped feta, brie is the latest cheese to get an airy update.
Following the butter board and custard toast, whipped brie is the latest trend on TikTok and could change your meatball board game forever.
But perhaps the best part is that it’s easy to do.
According to Meg Quinn, who started the trend on Instagram, to achieve a whipped effect, you need to mix equal parts butter and brie for a super creamy texture.
First, soften the ingredients to room temperature, then remove the rind and process the cheese in a food processor until smooth.
That’s it – an impressive salty plate for a festive dinner.
However, it’s fair to say that the latest trend doesn’t sit well with cheese traders.
That’s because it takes cheesemakers about two weeks to create the famous soft brie crust, and it’s all done under special conditions, according to the New England Cheesemaking Supply Company.
The rind is also a key characteristic of brie, so it’s only natural for traditionalists to shudder at how thoughtlessly it’s thrown away to make a whipped variety.
Emma Harvey, a cheese buyer at the South End City Market in Burlington, Vermont, told Allrecipes: “There are flavors and notes in the skin that are different from the cheese paste.
“Please, as a merchant, I beg you, don’t throw away the rind.”
